Add the flax seeds and large flake oats to the food processer and pulse until you have a coarse crumb.
Once you have a course crumb add the remaining ingredients for the snack bites to the food processor and run until fully combined. It may still look coarse and crumbly but should stick together when squeezed between your fingers.
Divide and roll into 12 equal sized balls. For me, this was 38g each but the weight may vary based on the size of your dates.
Mix all of the ingredients for the cinnamon sesame sugar together in a small bowl and then roll each of the snack bites in the sugar to evenly coat.Enjoy!
