Sesame Cinnamon Snack Bites

I am having an oat moment, one might even call it a moatment. One might not though, one might think that is too cheesy and to that I say – everything is a little too bleak for comfort right now and I will call it a moatment if I want to.
ANYWHO. The little treatsie I have for you today are these sesame cinnamon snack bites that I have made no less than five times in the last few weeks. I am quite obsessed. They are chewy, slightly sweet and packed with flavour. The kind of snack I would have thought was healthy before I started dieting, wouldn’t have touched with a ten foot pole while obsessively dieting, and now that I’m just trying to find a balance of things that I enjoy eating and don’t make my stomach hurt is the kind of snack I can just enjoy.

Learn From My Mistakes
A few weeks ago I posted a reel to my Instagram feed about the struggles of stirring a jar of tahini without the oil spilling everywhere and I was gifted a solution!
Turning that jar upside down has been a total game changer! Time is your friend here! You cant just do a quick flip, your best bet is to store the jar upside down when you get it home from the store. The oil will rise to the top (which is really the bottom of the jar) so that when you are ready to use it just turn the jar right side up and give it a stir!

Notes
Depending on the brand of tahini you use you may find that the snack bites are quite greasy when you go to shape them. Don’t be alarmed, this is normal!
Storage
These Sesame Cinnamon Snack Bites get even better with time! The flavours become more coheisive and the texture is chewier. Store them in an air tight container in the fridge.


Sesame Cinnamon Snack Bites
Equipment
- Measuring Cups
- Measuring Spoons
- Food Processor
Ingredients
Snack Bites
- 1/4 Cup Flax Seeds
- 1/2 Cup Large Flake Oats
- 1 Tbsp Ground Cinnamon
- 12 Medjool Dates Seeded
- 1/2 Cup Tahini
- 2 tsp Vanilla Extract
- 2 Tbsp Maple Syrup
Sesame Cinnamon Sugar
- 1 Tbsp White Sugar
- 1 Tbsp Sesame Seeds
- 0.5 tsp Cinnamon
Instructions
- Add the flax seeds and large flake oats to the food processer and pulse until you have a coarse crumb.
- Once you have a course crumb add the remaining ingredients for the snack bites to the food processor and run until fully combined. It may still look coarse and crumbly but should stick together when squeezed between your fingers.
- Divide and roll into 12 equal sized balls. For me, this was 38g each but the weight may vary based on the size of your dates.
- Mix all of the ingredients for the cinnamon sesame sugar together in a small bowl and then roll each of the snack bites in the sugar to evenly coat.Enjoy!
