S’mores Rice Krispies Treats

Do you ever see someone come up with an idea and think to yourself ‘I wish that was how my brain worked’? Because recently this happened to me when I saw someone roasting a Rice Krispie treat over a campfire. Genius. I wanted to try it immediately, but with fairly consistent and warranted fire bans in my area that wasn’t in the cards for me. In hindsight I could have taken the blow torch to them or put them under the broiler, but I decided that a Smore/Krispie hybrid was the way to go! The are soft, decadent and full of all the flavours of a summer campfire!

Brown Butter Makes Most Things Better

Brown butter is one of those magical ingredients that can really make a recipe sparkle. It adds richness and nuttiness and can transform a food from flat to complex. Swapping out regular butter for brown butter in cookies is a no brainer, but you should also consider using it in brownies, pasta, and soups, with fish or vegetables or even in a vinaigrette!

Since you are already going to the effort of browning butter for this recipe you can (and should in my opinion) make some extra to toss in the fridge and use at a later date! If you are going to use it directly in a pan you should strain out the milk solids using a fine mesh sieve or else they will burn and impact the flavour of the dish.

Broiling Marshmallows: A Note of Caution

I cannot stress this enough, your marshmallows should go no higher than the middle rack of your oven and you will need to keep a constant eye on them. Have you ever accidentally lit a marshmallow on fire over a fire? Me too. And if you aren’t careful you could be lighting a whole tray of marshmallows on fire. Slow and steady definitely wins the race here, and if they stick to the pan a bit that is okay! Sugar dissolves in warm water so that sticky mess will wipe away with ease if you let it soak for a few minutes.

Planning Ahead

  • The squares can be made 2-3 days in advance and stored in an airtight container. I recommend one made of glass as they may take on the flavours of your plastic container.
  • Butter can be browned and refrigerated up to three days in advance.
  • Dry ingredients can be scaled the day before.

Toasted Marshmallows, Brown Butter, Chocolate and Graham Crackers make these squares super dreamy!

Ingredients

  • 75g Salted Butter, 1/2″ Cubes (1/3 Cup)

  • 500g Marshmallows

  • 60g Graham Crackers, Roughly Crushed (1 Cup)

  • 100g Graham Cracker Crumbs (1 Cup)

  • 112g Rice Krispies (4 Cups)

  • 120g Semi Sweet Chocolate Chips

Directions

  • Grease a 9″x9″ pan and set aside.
    Preheat broiler.
  • Heat a large pot over medium heat, add butter and stir occasionally until melted.
    Stir frequently until the water has evaporated and the milk solids in the butter have turned golden brown, 5-7 minutes.
    Remove from the heat at set aside.
  • Spread marshmallows out in an even layer on a baking sheet.
    Place tray of marshmallows in the middle (absolutely no higher) and watch constantly for 90-120 seconds until marshmallows are golden brown and toasted to your liking.
  • Return pan of brown butter to medium low heat and add marshmallows. Some of them may stick to the pan, just do your best to scoop them into the pot.
    Gently stir butter and marshmallows until mostly combined, there will likely be a bit of butter that is still separate but that is okay. You looking for the marshmallows to be melted.
  • Remove pot from heat and add rice krispies and roughly chopped graham crackers stir to combine.
    Fold in chocolate chips and then transfer the rice krispie mixture to your prepared pan smoothing it so that it reaches all of the corners then let rest for at least 1 hour.
  • Grease a chefs knife and cut squares into a 4×4 grid and then toss in graham cracker crumbs.

Notes

  • Squares can be stored at room temperature in an airtight container for 3 days.
  • Be sure to keep a constant eye on the marshmallows.
