Baked oats FTW because I will not be cleaning an o Baked oats FTW because I will not be cleaning an oatmeal pot everyday. 

Ingredients
* 1/4 cup Unsalted Butter
* 2 cups Large Flake Oats
* 1/2 cup Brown Sugar
* 1/2 cup Flour
* 1 tsp Baking Powder
* 1/2 tsp Cardamom
* Salt
* 1 Pear
* 1 cup Plain Greek Yogurt
* 2 Eggs
* Cooking Spray or Neutral Oil

Instructions
* Preheat your oven to 350F and grease your loaf pan. You can also line the pan parchment paper for easy removal if you wish!

* Melt the butter in a small pan over medium heat. Continue to cook stirring frequently until the butter is a deep golden brown then set aside to cool.

* Add the flour, brown sugar, baking powder, cinnamon, cardamom and a large pinch of salt to a large bowl and stir to combine.

* Cut the pear into quarters then slice away the core. With the skin still intact use the large holes of a box grater to shred the pear.

* In a separate bowl whisk together the egg, greek yogurt, shredded pear and browned butter.

* Fold the wet ingredients into the oat mixture until just combined then transfer to your prepared baking pan. The batter is thick so you will want to smooth it into the corners and along the top.

* Bake for 35-40 minutes until the top is golden and the edges easily pull away from the side of the pan. Allow the oats to cool slightly then serve! These oats pair perfectly with poached pears, vanilla greek yogurt and maple syrup.

I’d be lying if I told you the kitchen is always spotless, staying tidy isn’t something that comes naturally to me, but these things make it easier to stay on top of the inevitable mess.
Okay, but why haven’t I always been making crisp Okay, but why haven’t I always been making crispy rice salads? Crispy rice is so versatile and a super easy way to add substance and texture to any salad like in this Crispy Romesco Rice Steak Salad, which is truly a fridge clean out masterpiece.

Ingredients:

ROASTED VEGETABLES
* 1/2 Head Cauliflower (cut into bite sized florets)
* 1 Red Onion (cut into 1/2” slices)
* 1 Tbsp Olive Oil
* 2 Tbsp Romesco
* Salt
CRISPY ROMESCO RICE
* 2 Cups Pre-cooked Basmati Rice
* 1/4 Cup Romesco
* 2 Tbsp Olive Oil
* Salt
STEAK
* 10 oz Sirloin (tempered for 30 minutes)
* Salt
* Pepper
* Vegetable Oil
SALAD
* 1/2 Lemon
* 1/4 cup Parsley (finely chopped)
* 1 Tbsp Olive Oil
* 1/4 cup Feta (crumbled)
* 4 cups Mixed Greens or Arugula
* 1/2 Cucumber (thinly sliced)
* Microgreens (optional)

SNACK BITES

1/4 Cup Flax Seeds
1/2 Cup Large Flake Oats
1 Tbsp Ground Cinnamon
12 Medjool Dates Seeded
1/2 Cup Tahini
2 tsp Vanilla Extract
2 Tbsp Maple Syrup
SESAME CINNAMON SUGAR

1 Tbsp White Sugar
1 Tbsp Sesame Seeds
0.5 tsp Cinnamon
Instructions

Add the flax seeds and large flake oats to the food processer and pulse until you have a coarse crumb.
Once you have a course crumb add the remaining ingredients for the snack bites to the food processor and run until fully combined. It may still look coarse and crumbly but should stick together when squeezed between your fingers.
Divide and roll into 12 equal sized balls. For me, this was 38g each but the weight may vary based on the size of your dates.
Mix all of the ingredients for the cinnamon sesame sugar together in a small bowl and then roll each of the snack bites in the sugar to evenly coat.
Enjoy!

All jokes aside I loved culinary school I just probably would have benefited from starting the anti-depressants a little sooner or taking myself a little less seriously. 

I think a lot about that meme that’s like ‘someone out there has a spaghetti exam at 10am’ because I did have a spaghetti exam. Well actually it was fettuccini, and you best believe I cried through that too. Just working away kneading the dough by hand wiping away the tears on the shoulder of my chef coat 😂🫣.
This ✨Brown Butter Maple Pecan Granola is a real This ✨Brown Butter Maple Pecan Granola is a real treat. The addition of whisked egg whites makes the granola light and crisp without having to add a ton of sugar and baking at the low temperature of 325F allows it to dry slowly. 

And while this wasn’t exactly the budget friendly queen of my dreams she sure is delicious. 

My biggest tip for granola is to take it out of the oven BEFORE it’s crunchy. It will dry as it cools and it’s better to have to toss it back in the oven for a bit than to have a bunch of burnt granola.

Ingredients:

2 cups oats (1.46)
1/4 cup brown butter (0.86)
1/4 cup maple syrup (1.74)
1/4 tbsp flax (0.66)
1/2 cup nuts (1.82)
Vanilla (Optional)
Maple Extract (Optional)
Salt 
2 egg whites (.8)

This hearty and delicious Cottage Pie with Mustard This hearty and delicious Cottage Pie with Mustard Spiked Mashed Potatoes is savoury and rich with a heavy hand of red wine that is reduced for maximum flavour and topped with a smooth and creamy mash.

I never truly appreciated a Shepherd’s Pie until I went to culinary school. Which is probably not something you would expect a culinary student to say. Why would you need to go to culinary school to appreciate something as simple as a meat pie? But hear me out! It is the perfect nutritious meal and is a great recipe to teach you how to develop flavour and cook for comfort!

Ingredients
* 1 lb Ground Beef (I used ground sirloin)
* 2 large Carrots (peeled, small dice)
* 3 Shallots (small dice)
* 2 cloves Garlic (minced)
* 2 sprigs Thyme (picked)
* 2/3 cup Red Wine
* 1/4 cup Tomato Paste
* 2 cups Beef Broth (no salt added)
* 2 tbsp Parsley (finely chopped)
* 1 tbsp Flour
* 1 tbsp Butter (room temperture)
* Salt
* Pepper
MUSTARD SPIKED MASHED POTATOES
* 1.5 lbs Yukon Gold Potatoes (peeled, 3/4” dice, weight after processing)
* 2 tbsp Butter
* 1/2 cup Milk
* 2 tsp Dijon Mustard
* Salt
