Ingredients
- 1/4 cup Unsalted Butter
- 2 cups Large Flake Oats
- 1/2 cup Brown Sugar
- 1/2 cup Flour
- 1 tsp Baking Powder
- 1/2 tsp Cardamom
- Salt
- 1 Pear
- 1 cup Plain Greek Yogurt
- 2 Eggs
- Cooking Spray or Neutral Oil
Instructions
- Preheat your oven to 350F and grease your loaf pan. You can also line the pan parchment paper for easy removal if you wish!
- Melt the butter in a small pan over medium heat. Continue to cook stirring frequently until the butter is a deep golden brown then set aside to cool.
- Add the flour, brown sugar, baking powder, cinnamon, cardamom and a large pinch of salt to a large bowl and stir to combine.
- Cut the pear into quarters then slice away the core. With the skin still intact use the large holes of a box grater to shred the pear.
- In a separate bowl whisk together the egg, greek yogurt, shredded pear and browned butter.
- Fold the wet ingredients into the oat mixture until just combined then transfer to your prepared baking pan. The batter is thick so you will want to smooth it into the corners and along the top.
- Bake for 35-40 minutes until the top is golden and the edges easily pull away from the side of the pan. Allow the oats to cool slightly then serve! These oats pair perfectly with poached pears, vanilla greek yogurt and maple syrup.
